Twenty days into unResolution month, we come back to where it all began. In many ways, the moment to do unResolution month, the minute I thought I had landed on pure genius, was when I asked the simple question to my friends on Twitter: “What would happen if I deep fried a Lean Pocket?”
And from the responses, I knew I had to make
Fried Lean Pockets
Some of you may ask why fried Lean Pockets.
Why do mountaineers climb Everest? Why do great artists create magnificent art? Why? Because they can! So why did I make fried lean pockets?! Because I can!
Yes I can!
(Okay, maybe all the grease is getting to me, but anyway…) Are you ready for some fried Lean Pocket?
You will need:
- 1 Box of Lean Pockets
- 2 cups of All-Purpose Flour
- 2 cups of milk
- 1 egg
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- Oil for frying
Microwave the Lean Pockets per the package directions. Allow to cool.
Mix together the flour, milk, egg, salt, and baking powder. Whisk until it is smooth. It should have the consistency of pancake batter.
Dip each Lean Pocket in the batter. Remove to a plate and let the batter rest while the oil is heating.
Heat the oil to 350 degrees or slightly under medium high on a stove. Fry the Lean Pockets until golden brown and crispy, maybe 4 minutes. Remove to a towel and allow them to drain.
Eat and enjoy!
- It should be noted that Lean Pockets is Trademarked NESTLÉ and in no way has given permission for me to use their name or fry them.
- BTW, I have a picture. I also have camera challenges…
