Okay, this is some bonus #LetsLunch coverage.  I liked my previous post, but I wasn’t sure it featured the creativity that #LetsLunch deserves.  Plus, I had more time than I thought I would (yes, I am just as surprised as you are) and when you do a Twitter/blogging/food writing event like #LetsLunch, you’re in elite company and you better bring your A game.  (And by you I mean me.)

So, I thought I’d throw together a little grilled cheese sandwich magic by one of my favorite foods in the world: buffalo wings.  We’ll get the party started with buffalo wing cheese (see above), but this sandwich needs more than just wing sauce cheese, it  needs some chicken.  And since this is #LetsLunch, I figure we might as well guild the lily a bit and use confited chicken wings which take a little while to make, but they are so good.

Buffalo Chicken Grilled Cheese with Confit Chicken Recipe

The bad news about this sandwich is that confit chicken takes about 3 hours to make.  The good news is that all but about 5 minutes of that time is the chicken cooking slowly in the oven.  The better news is that your house will smell wonderful.

You will need:

  • 6 chicken wings
  • Salt
  • 2-4 dried chiles, broken into pieces
  • 4 cups vegetable oil
  • 8 slices thick bread
  • 8 tablespoons butter
  • 8 ounces buffalo wing sauce cheese (room temperature if possible)
  • Cooking spray
  • Ranch or blue cheese dressing on the side

Preheat oven to 250.

In 9 inch Pyrex pan, add the chicken wings, sprinkle them liberally with salt, add the chilies and add enough oil to completely cover the chicken.

Bake the chicken for 3 hours or until it is done all the way through.

Butter one side of each piece of bread.  Take a piece of bread, put it butter side down.  Add 1 ounce of cheese, some chicken, another ounce of cheese and top with the bread so that butter side is face up.  Repeat with the other three sandwiches.

Get a skillet hot over medium-high heat, then cover with cooking spray.  Add two sandwiches, cook 2-3 minutes and then flip.  Cook 2-3 minutes on the other side.  If the cheese isn’t fully melted, flip and continue cooking.

Serve with dressing and enjoy!
