Welcome back! It’s Day 10 of Dancing Deer’s CEO Trish Karter’s 1,500 mile bicycle trek from Atlanta to Boston, which she is doing to raise awareness for family homelessness. I am back in front of a real keyboard and I am making dessert with chocolate tangerine cookies.
Chocolate Tangerine Mint Ice Cream Cookie
This is another one of those desserts that’s really easy to make and requires absolutely no baking. Just a little freezer time. I also really liked the combination of the rich chocolate, citrusy tangerine, and the bite of the mint. My wife … not so much. She just didn’t dig the tangerine.
So if you’re making these cookies for me, use the chocolate tangerine cookies. If you are making them for her, use Dancing Deer monster cookies. She likes those better!
Making Chocolate Tangerine Mint Ice Creeam Cookie
These cookies can be made very quickly, however, they won’t set up as pretty if you don’t let the ice cream soften and then put them back in the freezer. However, I am a big proponent of the idea that it all looks the same once you eat it. So either way, go for it!
You will need:
- 1 Package of Dancing Deer Chocolate Tangerine Cookies
- 4 Scoops mint ice cream
Set the ice cream out for a few minutes to let it soften. Put one scoop of ice cream on the flat part of four cookies and use the scoop to gently spread it.
Put the other cookie flat side down on top of the ice cream and gently press down.
Put back in the freezer for 10-15 minutes to let the ice cream harden.
Then open mouth and enjoy!

According to the National Center on Family Homelessness, over 92% of homeless mothers have experienced severe physical and/or sexual abuse during their lifetime. For 63%, this abuse was perpetrated by an intimate partner.
