As the weather gets cooler, it’s time to start thinking soup.  (I think you’ve heard me say that before.)  But, have you heard me talk about

Poblano Corn Chowder with Match Meat Chicken?

I didn’t think so!

I really cannot claim this recipe as my own.  I first got the idea when I was still vegetarian and watching Paula Deen on the Food Network.  She made this delicious looking poblano chicken corn chowder full of big chunks of chicken, kernels of golden sweet corn, and spicy (but not that spicy) poblano peppers.  Oh, and cream.  Can’t forget the cream.

Whoever was guest hosting on that particular episode took one bit of the chowder and absolutely swooned.  Not one to be outdone , even by the mistress of butter, I decided I had to make my own version of the soup but without the meat.  I settled on Match Meat because I had a package of chicken handy and I love it.  However, if you can’t get a hold of Match Meat, you could always use Morningstar Farms chicken patties or simply omit it since the real flavor of the soup comes from the peppers and corn anyway!

Making Poblano Corn Chowder With Match Meat

This recipe is really easy.  All you need to do is cook your onions and peppers and then simmer until everything is warm.  No fuss! 

Yes, the ingredient list is not tiny, but it’ll be really easy I promise!

You will need:

  • 2 tablespoons olive oil
  • 1 poblano pepper, seeded and diced
  • 1 medium onion, diced
  • 2 cloves garlic, sliced
  • 1 quart vegetable broth
  • 1 16 oz bag of frozen corn
  • 1 package Match Meats chicken, thawed
  • 1/2 cup heavy cream

In a soup pot over medium-high heat, warm the oil and then add the poblano peppers.  Cook for about 2 minute and then add the onions, garlic, and a pinch of salt.  Cook for 10-12 minutes or until the onions have started to turn brown and sweet.

Add the broth and bring to a boil.  Then turn the heat down to medium or lower and let the soup gently bubble for 10-15 minutes.  (You can skip this step, but it makes the soup taste a bit better.)

Add the corn and match meat and wait until they get warm  (if you are impatient like me, you can crank the heat back to medium high).  Finally, add the cream and let the soup get warm again.

Ladle into bowls and enjoy!
